Chocolate Cake

This recipe is also known as Depression cake, or wacky cake

3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
2 teaspoons vanilla extract
2/3 cup canola oil
2 tablespoons vinegar

Preheat oven to 350 degrees F (175 degrees C). Prepare 9x13 pan with butter and flour.
Sift flour, sugar, salt, soda, and cocoa together. Add water, then vanilla and oil, stirring well.  Finally, add the vinegar mixing it in well (this is the most important ingredient; it will react with the baking soda to make the cake rise), pour quickly into pan(s).
Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.
